And maybe the best ribs I ever ate came from a church front store in Liberty City, Miami.

Are they kidding? The Shed? Their bbq isn't bad but they drown it. Strangely, their best bbq I've ever had was just 20 miles east in Pascagoula. Rob's on the Side, it's tiny, open at odd times and all the other attributes of an excellent bbq place where the food counts for 110% of the business.
As for Texas, I once drove across the country on I-10. In Texas, somewhere west of San Antonio, I started stopping at just about every exit for bbq. (relax, the exits are like 2 hours apart there). Never had a bad plate in 5 or 6 random stops. Skipped the sides until dinner at an exit on the west side of Houston. It's amazing how much bbq you can eat if you don't fill up on bread.

Most downhome places give you slices of storebought plain white bread (like Sunbeam) for sopping.
I tell them thanks, but keep it and give it somebody who wants it.

Do they do ribs in Texas?
Seems like all the BBQ I have ever eaten in Texas has been brisket.
Lots of good BBQ brisket there.
If we are talking about BBQ, we need Ray Stevens to sing about it!
Your fellow North Carolinian has written some stirring words about BBQ in his various books as has Calvin Trilling. Sometimes reading about it is almost as good as eating it.
